How about a cold cooling Russian borstch during hot summer time? If you never tried this before, I promise you will love it. My family usually makes it during the hot summer season. Russian Cold Borstch "Holodnik"
How about delicious and hydrating cold Russian borscht during this hot summer time? It is a one of those cool cold soup you can treat yourself everyday while it is hot. I promise you will love it!

  • 8 cups of water
  • Cultured milk "kefir"
  • 2 beets
  • 2 pickles
  • 2 eggs
  • green onions
  1. Boil 8 cups of water and cool it then add cultured milk. Boil beets and grate them, dice pickles, eggs, Slice green onions, dill and add it to the cultured milk mixture. Add salt and pepper. Put Holodnik into fridge and let it cool for 4 hours. Some people prefer it to be more thick, so you can add sour cream. For 8 cups of water that we are using here add 4 cups of sour cream.
